Chicken Salad

This is one of my go-to lunch recipes.  I love to mix it up by serving over sliced tomatoes or a bed of spinach. It is also fun to mix up my ingredients for something a little different.  The recipe below is with quinoa and garnished with sliced avocados.  If I want a different twist on things, I will use grapes in the mix and garnish with nuts.  I love to make things easy so I cheat with a fresh rotisserie chicken as my base for the salad.  This recipe is for two servings but you can adjust to your needs.  I also need to confess that I'm one of those cooks who throws things together without measuring so adjust the ingredients to your taste.  Use your culinary imagination and just play with the recipe to make it your own! 

Ingredients:

  • 1 rotisserie chicken breast, skin removed and de-boned
  • 1/4 cup cooked quinoa 
  • 1/2 cup broccoli raw slaw
  • 2 tablespoons pecans
  • 2 tablespoons Primal Kitchen Mayo (gf/df/soy & sugar free)
  • Salt, Pepper and Dill Weed to your taste
  • 1 small avocado to garnish

Instructions:

  1. Toss the chicken, cooked quinoa, broccoli slaw and pecans in a food processor.  Process until all the ingredients are chopped and mixed to your liking.  
  2. Place chopped ingredients in a mixing bowl.
  3. Add Mayo and seasonings to mixing bowl. 
  4. Combine well.
  5. Serve over sliced tomatoes and garnish with avocado slices.
