Cinnamon Waffles
Cinnamon Waffles with Fruit Sauce
This is a Sunday morning favorite at my house. We call it Sunday Brunching at Home. These waffles are grain-free, dairy-free and delicious. The recipe was adapted from the "Always Hungry?" book. Get your waffle iron ready!
Waffle Ingredients:
- 1 cup of garbanzo-fava or garbanzo bean flour
- 1/8 teaspoon salt
- 3/4 teaspoon baking soda
- 1 tablespoon ground cinnamon
- 1 egg, separated
- 3/4 cup unsweetened plain coconut yogurt
- 1/4 cup unsweetened almond milk
- 1/4 cup avocado oil
- 1/2 teaspoon pure vanilla extract
Instructions:
- Preheat waffle iron.
- Combine the flour, salt, baking soda and cinnamon in a large bowl.
- In another bowl, whisk together the egg yolk, yogurt, milk, oil and vanilla.
- Stir the wet ingredients into the dry ingredients until well combined. Batter should be thick.
- Beat the egg white with a whisk until it forms soft peaks. Gently fold the egg white into the batter.
- Brush waffle iron with oil or spitz with coconut spray.
- Spoon the batter per waffle into the waffle iron. I use about 3/4 cup on my waffle iron.
- Cook until golden or about 2 minutes. My waffle iron actually has a handy cooked indicator light!
- Serve hot with about 1/3 cup of fruit sauce and garnish with about 1tablespoon of pecans.
Fruit Sauce Ingredients:
- 3/4 cup frozen blueberries, strawberries, raspberries or cherries (I use a combination of all berries for mine.)
- 1 tablespoon water
- 2 tablespoons pure maple syrup
Instructions:
- Place fruit, water and maple syrup in a deep microwavable glass mason jar or deep cup.
- Microwave for about 1 minute or until fruit is soft and warm. You can also cook this on the stove top.
- Use an immersion blender to gently puree the berries.
