Stewed Shrimp and Okra
Maybe it's a southern thing, but I love fresh cooked okra. In a pinch for something for dinner one Friday, I spotted some fresh okra and shrimp at the market. I decided to combo the two for a yummy Friday night stay-in dinner!
Ingredients:
- 1 pound of fresh okra, sliced into 1/4 rounds
- 1 pound of fresh peeled, deveined shrimp
- 3 tablespoons of oil olive
- 1/4 cup of water
- 14 ounce can of Fire-Roasted Diced Tomatoes
- 1/2 tablespoon Turmeric
- Salt and Pepper to taste
- Cooked Quinoa to serve it over
- Feta Cheese to garnish
Instructions:
- Add olive oil and okra to a sauce pan over medium heat. Cook for about 5 minutes.
- Add water to the okra and cook for about another 5 minutes.
- Add shrimp to the pan. Add the turmeric, salt and pepper.
- Stir all the above. Cook for another 5 minutes. Watch to ensure the okra doesn't stick to the bottom of the pan. Add water if you need more.
- Add the can of tomatoes and combine well. Cover and cook over medium to low heat until okra is tender.
- Serve over cooked quinoa and garnish with a little feta cheese.
