Stewed Shrimp and Okra

Maybe it's a southern thing, but I love fresh cooked okra.  In a pinch for something for dinner one Friday, I spotted some fresh okra and shrimp at the market.  I decided to combo the two for a yummy Friday night stay-in dinner! 

Ingredients:

  • 1 pound of fresh okra, sliced into 1/4 rounds
  • 1 pound of fresh peeled, deveined shrimp 
  • 3 tablespoons of oil olive
  • 1/4 cup of water
  • 14 ounce can of Fire-Roasted Diced Tomatoes
  • 1/2 tablespoon Turmeric 
  • Salt and Pepper to taste
  • Cooked Quinoa to serve it over
  • Feta Cheese to garnish

Instructions:

  1. Add olive oil and okra to a sauce pan over medium heat.  Cook for about 5 minutes.
  2. Add water to the okra and cook for about another 5 minutes.
  3. Add shrimp to the pan.  Add the turmeric, salt and pepper.   
  4. Stir all the above.  Cook for another 5 minutes.  Watch to ensure the okra doesn't stick to the bottom of the pan.  Add water if you need more. 
  5. Add the can of tomatoes and combine well.  Cover and cook over medium to low heat until okra is tender.
  6. Serve over cooked quinoa and garnish with a little feta cheese.
